Easy mini veggie casserole

Sometimes, you don't have a lot of time, but you want to feed your little ones something healthy and delicious.  
Look no more! Try our mini veggie casserole. 
Serving size: two 4.5" ramekins

Ingredients:
• 1/3 crown of broccoli
• 1/2 large ripe tomato
• 1 egg
• 1/2 cup assorted grated cheese (we used parmesan and 
mozzarella)
• 1 cup of cooked rice

Instructions:
1.  Preheat your over to 350 degrees
2.  Chop up the tomato into little tiny cubes. Chop up 
the broccoli so it's very fine. Mix them in with the rice 
in a large bowl. Add half the amount of cheese you have and mix it 
evenly with the rice.
3.  Take your ramekins and fill the 3/4 of the way with 
your rice, tomato and broccoli mixture.  Using a spoon, 
start from the middle of the ramekin and spread the rice 
out towards the rim so it creates a nice little pocket inthe middle--sort of like a donut.
4.  Beat your egg and pour it in the two ramekins. Add 
more yummy cheese.  
5.  Put the mini casseroles into the oven for 12-15 min.If you like the cheese to be melted and not crispy on 
top, take it out around 12 min.  If you like it a little crispy, wait until 15 min to remove. ENJOY!
