Baby’s first birthday cake

An all natural sugarless, no butter, carrot cake recipe 
for a Baby's First Birthday Cake.

• 3/4 cup all purpose flour
• 1/4 teaspoon salt
• 1/4 tablespoon baking soda/powder
• 1/4 tablespoon cinnamon
• 1/4 teaspoon ginger (freshly grated)
• 1 egg
• 1/2 ripe banana
• 1/4 whole mango or large peach
• 1/4 cup olive oil
• 2 tablespoons apple sauce
• 1/4 tablespoon vanilla extract
• 1/3 cup carrot, shredded
• 3/4 cup Heavy cream

1.  Preheat oven to 350 and line the bottom of two 
4.5" ramekins with parchment.  Grease the parchment with olive oil.
2.  Mix all the dry ingredients together in a bowl.  Add in the freshly grated ginger.  Beat the egg, banana, and mango or 
peach on high for 3-5 minutes.  The mixture should look fluffy.  
Add in the unsweetened apple sauce and vanilla.
3.  Use a spatula to fold in the dry ingredients.  Add in the carrots and stir evenly.
4.  Pour the mixture into the two ramekins equally. Bake at 350 degrees for 20 minutes or until toothpick comes out clean.
5.  Let the cakes cool and remove from ramekins.
6.  Whip the heavy cream on high for 3-5 minutes.  
Apply cream in between the two layers of cake. 
Coat the outside as desired.Top with delicious berries.
